The main Activiti documentation is updated for v6 so you could look at Activiti User Guide  or if you're writing your own spring MVC app then you might first want to look at the quickstart guide - Quick Start Guide | Activiti.org . Or if you're using spring boot you might want to look at Getting started with Activiti and Spring Boot . Many of the examples on the web are not specific to v6 (most relate to older versions) but this should be fine for you as those examples should all still work in v6.
